Here’s another quick little recipe for us kiddos on a budget:


oatmeal.

And note I did not say porridge. For this recipe you need jumbo WHOLE oats (Jordan’s is a good brand in the UK, I discovered). If they’re all cut up they get gruel-ish and that’s just yicky.

World’s Greatest Oatmeal (originally from Kath Eats Real Food)

1/2 cup jumbo whole oats (like I said, I used Jordan’s)
1/2 cup milk
1/2 cup water
1/2 banana, thinly sliced
1 tsp vanilla extract (though I didn’t have any, and it was still delicious without it)

topping:

a pinch of cinnamon
raspberry preserves (I used Bonne Maman)
granola (I used Dorset’s Simply Delicious Muesli)*

In a sauce pan, pour in your oats, milk, water, and banana. Put on medium heat, and let it get a bit bubbly and frothy before you start to stir it. Once it’s getting happy on the hob, stir it quite well. The point is to break up the bananas and whip them into the oatmeal (it makes it thick, silky, and wonderful). After about five minutes (you’ll just know when it’s done, I promise), pour in the vanilla extract, give it a final few whirls and take it off the heat.

Pour into your bowl, put on toppings, and enjoy!

*The toppings are really limitless. Blueberries and granola, raspberries, strawberries, peanut butter, maple syrup and brown sugar . . . go nuts! be creative!
